The evening ritual

In season, an evening that starts at sunset.

  1. 01

    6:30 PM — sunset

Doors open every day at 6:30 PM. The evening starts with the sun going down behind the pines.

  2. 02

    Aperitivo in the garden

Signature drinks in the gallery garden — the "Galleria Liquida" list, from sunset onwards.

  3. 03

    Dinner among the artworks

Fresh fish and the honest, creative cooking of chef Orlando Rapana, in a glass pavilion surrounded by the works of the Orler art gallery.

  4. 04

    After-dinner until 2 AM

The night is young: drinks in the garden, live music on select evenings, until 2 in the morning.

A restaurant unlike the usual.

  • Fresh fish, every day

Every dish starts from this morning's catch: crudo of the day cleaned to order, seafood pasta, fish of the day. The menu follows the market — allergens available on request.

  • Garden & art gallery

You dine in a glass pavilion in the garden of the Orler art gallery. Art can be intimidating — here it keeps you company while you eat.

  • Events & private parties

Birthdays, corporate dinners, weddings in Tuscany: over 600 m² of garden and gallery, live music and DJ sets. On weekends, Serie A matches on screen.

Behind the scenes

80 days of season, hands-on management, books in order from the first day to the last.

  1. The starting point

A venue on the Punta Ala piazzetta, closed for years. No team, no suppliers, no concept: just the keys, with the season already at the door. Recent history said a restaurant couldn't work there. That's where we started.

  2. The build

In a few weeks we assembled the machine: the concept (a seafood bistrot, the "Controcorrente" identity), a team of 9 regular hires — contracts and payslips included — supplier negotiations, a menu built dish by dish with margins calculated before printing the card, prices decided on numbers, not on gut feeling.

  3. The management

We didn't advise from the outside: we ran it as owners, on the floor, every day. Every night the day closed on the numbers — revenue, covers, food cost, distance from break-even. All inside a back-office we built in-house, because we wanted to see every euro in real time, from any device.

  4. Digital, made in-house

A website with online reservations, a fidelity card straight onto Apple Wallet, campaigns and social channels run internally. No external vendor to wait for: when something needed changing, it changed the same day.

  5. The closing

How you close a season says more than how you open it. ART closed with a complete management balance: profit & loss, cash reconciled to the cent, contracts wound down and obligations in order. No queues, no surprises, nothing left hanging.

Why we tell this story

ART is our method, applied to ourselves.

Build, measure everything, manage in first person. That's what we bring to every client: not advice from the outside, but a machine that works — with the numbers in hand, every night.
